Dairy-Free Cashew Pasta Sauce

Ingredients
  

  • 2 cloves of garlic, minced
  • 1/4 white onion, roughly chopped
  • 1 cup soaked raw cashews
  • 1/3 cup nutritional yeast
  • 1/2 lemon, juiced
  • 1/2 cup plant-based milk
  • 1 tbsp avocado oil to cook onion and garlic
  • salt and pepper to taste
  • 1 package cooked pasta

Optional Ingredients

  • 1 cup cooked mushrooms
  • 1 package cooked shrimp

Instructions
 

  • Add the oil, garlic and onion to a frying pan on medium heat and cook until softened
  • Add the garlic, onion, lemon juice, cashews, milk, salt, and pepper to a food processor and blend until smooth
  • Add to frying pan with cooked pasta, veggies and shrimp
  • Enjoy
