Gluten-Free Crusted Sole

Ingredients
  

  • 6-8 pieces of sole
  • 1 tbsp avocado or olive oil
  • 2 eggs
  • 1 cup almond flour
  • 2 tbsp coconut flour
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt

Instructions
 

  • Preheat oven to 425F
  • Line a large baking sheet with parchment paper
  • Combine almond flour, coconut flour, salt, garlic powder and paprika in one bowl
  • In a separate bowl whisk eggs and oil together
  • Add sole to egg then dry mix and repeat again
  • Place on a baking sheet and do for the remaining pieces
  • Bake for 20 minutes or until cooked
