Spaghetti Squash Pizza Bowls

I have been craving pizza ALOT during this pregnancy but unfortunately, pizza doesn’t really love me back so I created this Spaghetti Squash Pizza Bowls recipe. I have been experimenting with simple and fun at-home pizza alternatives that are great if you are craving pizza but want something a little healthier. This Spaghetti Squash Pizza Bowl is not only delicious but actually really simple and easily customizable.

You will notice there are optional toppings to choose from as well as a tempeh bacon recipe if you’re too lazy to make bacon like me! Make it what you want and go as crazy as you want with the toppings!

I personally love pepperoni, bacon, mushroom, peppers, and onion! Give it a try and let me know what combination you go with.

Spaghetti Squash Pizza Bowls

Ingredients
  

Tempeh Bacon (Optional Topping)

  • 1 tbsp tamari
  • 1 tbsp maple syrup
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1 tbsp avocado oil

Squash

  • 1 spaghetti squash, halved and cleaned
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp avocado oil

Toppings (Optional)

  • 1/2 bell pepper, sliced
  • 1/4 onion of choice, sliced
  • 1 cup mushrooms, sliced
  • 1 tbsp avocado oil
  • 2 slices of cheese of choice
  • 1-1.5 cups tomato sauce
  • seat salt and pepper to taste
  • pepperoni, tempeh or meat of choice
  • fresh basil

Instructions
 

  • Preheat oven to 400F
  • Line a baking sheet with parchment paper
  • Add oil salt and pepper to the inside of the squash and place face down on a baking sheet
  • Bake for 35-40 minutes or until soft. When cooked, use a fork to loosen squash but leave in the squash
  • In the meantime crumble the tempeh and add all the tempeh ingredients to a frying pan on medium heat and cook until heated and browned
  • In a separate frying pan add avocado oil and veggies of choice until softened
  • Once the squash is done add in tomato sauce, tempeh (if you choose to use it), and veggies. Next, add cheese and any other cooked meat toppings.
  • Put back into the oven until cheese is melted
  • Remove and top with fresh basil if you want
  • Enjoy!
